Trust me on this one. The lime juice and tamari sauce naturally tenderize the chicken, while the garlic and fresh ginger deliver flavor in a big way. Then it's topped with a fresh mango salsa that will make you look like a culinary wunderkind-all with only 25 minutes of prep!

Ingredients

  • 6 large boneless, skinless, single chicken breasts
  • 4 garlic cloves, minced
  • 1 3-inch piece fresh ginger, peeled and grated (medium grate)
  • 1/4 cup tamari sauce or soy sauce
  • 1/4 cup freshly squeezed lime juice
  • 2 tablespoons toasted sesame oil (very optional)

Preparation

  1. Rinse the chicken thoroughly under cold running water.
  2. In a large bowl, combine the remaining ingredients.
  3. Add the chicken breasts and turn several times to mix the ingredients. Make sure that chicken is covered by the marinade.
  4. Cover and marinate for at least 2 hours in the refrigerator.
  5. Grill over medium-high direct heat for about 5 minutes per side, or until cooked throughout. Avoid overcooking.
  6. Place the cooked chicken on warmed plates and spoon a generous serving of salsa over each serving.

Mango Salsa

Ingredients

  • 2 mangos, peeled, pitted, and cut into 1/4-inch cubes
  • 1/4 cup freshly squeezed lime juice
  • 1 serrano, jalapeño or árbol chili(es), seeds and membranes removed, minced
  • 3 green onions, finely sliced
  • 2/3 cup lightly packed fresh cilantro leaves, (remove stems before measuring) coarsely chopped

Preparation

Combine all the ingredients in a bowl and mix thoroughly with a fork



Note :

  1. Select mangos that are at their peak of ripeness, yet still firm.
  2. Add kiwis and/or papaya to the salsa.
  3.  When shopping for boneless chicken breasts, choose the plumpest breasts possible, as these tend to remain moister.
  4. Make a small incision to see whether the chicken is cooked throughout. If any pink remains, return it to the grill.
  5. If red chilies are unavailable for your salsa, use green or dried chilies and "cheat" the color by adding one fourth of a red bell pepper, finely diced.

alternatives

i) This marinade works wonderfully with mahi-mahi.

ii) The cilantro may be replaced with half the amount of fresh mint.
